Squid Luau II

Octopus is sometimes referred to as squid in Hawaii and if you have it and are comfortable preparing it, you can use it in this recipe. But it is perfectly fine to use actual squid, too, though I recommend the small ones, not the enormous ones.

  • Makes 4 to 6 servings

Ingredients

  • 4 tablespoons butter
  • 4 cups cooked luau (taro) leaves (see recipe above)
  • 2 cups coconut milk
  • 1 ½ pounds squid or octopus, cleaned and cooked
  • Hawaiian alaea or kosher salt, to taste

Directions

  1. Melt the butter in a large saucepan set over medium heat, stir in the luau leaves and heat through.

  2. Stir in the coconut milk and squid, heat through and add salt to taste, so that the flavors come together.

  3. Transfer to a bowl and serve immediately.
