Sweet Onion Salad

Sweet onions are best enjoyed simply, on sandwiches or in salads, so that  you can enjoy their full flavor and texture without interference.

  • Serves 4 to 6

Ingredients

  • 1 large or 2 to 3 small sweet onions, peeled and very thinly sliced
  • 2 teaspoons sugar
  • 1/3 cup low-acid pear, raspberry or other fruit vinegar
  • Kosher salt
  • Black pepper in a mill

Directions

  1. Arrange the onions in a wide shallow dish. Sprinkle the sugar over them, add the vinegar, and set aside for 15 to 60 minutes.

  2. Season with salt and several generous turns of black pepper and enjoy at room temperature.
