Cheese and Scallion Toasts

And if you are feeding teenagers, you may want to keep this around, as it is a great after school and late night snack, especially when there's a growth spurt underway. These tangy toasts are also ideal for a casual lunch, afternoon tea, or appetizers before a barbecue. If you don’t have walnuts, omit them or use pecans instead.

  • Makes about 2 to 2 1/2 dozen small toasts

Ingredients

  • 1 1/2 cups thinly sliced scallions (white and green part), from 2 bunches
  • 1/3 cup minced Italian parsley
  • 8 ounces (2 cups) Bellwether Carmody, St. George, or medium-sharp Cheddar cheese, grated
  • 1/2 cup walnut pieces, toasted and minced
  • 1/2 cup mayonnaise
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon Tabasco Sauce or hot sauce of choice, plus more to taste
  • Black pepper in a mill
  • 1 baguette, thinly sliced and toasted

Directions

  1. In a medium bowl, mix together the scallions, parsley, cheese, walnuts, mayonnaise, Worcestershire sauce, chipotle or Tabasco sauce, and several turns of black pepper. To make the mixture in a food processor, put all of the ingredients in the work bowl and pulse until thoroughly mixed.

  2. Preheat an oven broiler. Spread some of the scallion mixture over the surface of each slice of toasted baguette and broil until the cheese is bubbling and golden brown, about 2 to 3 minutes. Remove from the oven and serve immediately.
