Purple Sweet Potato Poke

I think this dish should be considered salad instead of poke but I include it here to demonstrate how far the boundaries of the traditional dish have been expanded.

  • Serves 6 to 8

Ingredients

  • 2 pounds purple sweet potatoes, roasted, peeled and cut into 1/2 inch cubes
  • 1 small sweet onion, diced
  • 1 green onion, very thinly sliced
  • 3 tablespoons cilantro leaves, torn into pieces
  • 1 teaspoon red pepper flakes
  • 1/3 cup soy sauce
  • Hawaiian alaea salt, lightly crushed
  • 2 tablespoons crushed macadamia nuts

Directions

  1. Put the sweet potatoes into a bowl, add the onions, cilantro and red pepper flakes and toss gently.

  2. Add the soy sauce and toss again.

  3. Transfer to a serving platter, sprinkle the salt and the nuts on top and serve.
