Golden Cherry Tomatoes with New Garlic & Basil

The first tomatoes are cause for celebration and indulgence. The first are almost always cherry tomatoes and, depending on the year’s weather and where you live, they appear sometime between early June and mid July. This simple salad is a perfect way to celebrate the season.

  • Serves 4 to 6

Ingredients

  • 1 pint golden cherry tomatoes
  • 2 fresh new garlic cloves
  • 2 to 3 tablespoons best-quality olive oil
  • 6 basil leaves, shredded
  • Kosher salt
  • Black pepper in a mill
  • 1/2 baguette, sliced and toasted

Directions

  1. Use a sharp knife to cut the smallest of the tomatoes in half; cut larger ones into quarters. Put the tomatoes in a serving bowl and set aside.

  2. Set a clove of garlic on a hard work surface and set the flat side of a broad knife blade on top. Gently but swiftly push down to just crush the clove; repeat with the second clove of garlic.

  3. Coarsely chop the crushed garlic and add it to the tomatoes, stirring gently a time or two. Add the olive oil and basil, season with salt and pepper, and set aside until ready to serve. The salad can rest at room temperature for an hour or two.

  4. Serve with toasted baguette slices.
